Ingredients:
- 1 kg (2.2 lbs) chicken thighs, cut into 1.5 cm (0.6 in) thick slices
- 1 tbsp (15 ml) salt
- 1 tsp (5 ml) black pepper
- 1 tbsp (15 ml) cornstarch
- 1 tbsp (15 ml) vegetable oil
- 1 tbsp (15 ml) chopped onion
- 1 tbsp (15 ml) chopped garlic
- 1 tsp (5 ml) black peppercorns
- 1 tsp (5 ml) ground black pepper
Instructions:
- In a large bowl, combine the chicken slices, salt, black pepper, cornstarch, vegetable oil, onion, garlic, black peppercorns, and ground black pepper.
- Let the mixture marinate for 30 minutes to an hour.
- Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).
- Fry the chicken slices in batches for 5-7 minutes per side, or until golden brown and cooked through.
- Drain the chicken on paper towels and serve immediately.
Tips:
- For a crispier crust, double-fry the chicken. First fry it at 180°C (350°F) for 5 minutes, then fry it again at 200°C (400°F) for 2 minutes.
- Serve with a dipping sauce of your choice, such as soy sauce, hoisin sauce, or chili sauce.
- You can also add other toppings to the chicken, such as chopped vegetables, mushrooms, or cheese.
