Ingredients:

  • 1 whole chicken, about 1.5 kg (3.3 lbs)
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 1 tbsp oil
  • 1 tbsp chopped onion
  • 1 tbsp chopped garlic
  • 1 tsp dried chili flakes
  • 1 tsp ground black pepper
  • 1 tbsp chopped cilantro

Instructions:

  1. Rinse and pat dry the chicken.
  2. Rub the chicken with salt, black peppercorns, oil, onion, garlic, chili flakes, and black pepper.
  3. Tie the legs together with kitchen twine.
  4. Place the chicken in a roasting pan.
  5. Roast for 1 hour and 30 minutes to 2 hours, or until the internal temperature reaches 74°C (160°F).
  6. Baste the chicken with the sauce made with 1 tbsp of water, 1 tbsp of soy sauce, and 1 tbsp of honey.
  7. Roast for an additional 15-20 minutes, or until the skin is crispy and the juices are cooked through.
  8. Serve immediately with cilantro.

Tips:

  • For a more flavorful chicken, use a high-quality chicken.
  • If you don't have kitchen twine, you can tie the legs together with string or butcher's tape.
  • To make the sauce, combine the water, soy sauce, and honey in a small saucepan and simmer for 5 minutes.
