Ingredients:
- 1 whole chicken, about 1.5 kg (3.3 lbs)
- 1 tbsp salt
- 1 tsp black peppercorns
- 1 tbsp oil
- 1 tbsp chopped onion
- 1 tbsp chopped garlic
- 1 tsp dried chili flakes
- 1 tsp ground black pepper
- 1 tbsp chopped cilantro
Instructions:
- Rinse and pat dry the chicken.
- Rub the chicken with salt, black peppercorns, oil, onion, garlic, chili flakes, and black pepper.
- Tie the legs together with kitchen twine.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 30 minutes to 2 hours, or until the internal temperature reaches 74°C (160°F).
- Baste the chicken with the sauce made with 1 tbsp of water, 1 tbsp of soy sauce, and 1 tbsp of honey.
- Roast for an additional 15-20 minutes, or until the skin is crispy and the juices are cooked through.
- Serve immediately with cilantro.

- For a more flavorful chicken, use a high-quality chicken.
- If you don't have kitchen twine, you can tie the legs together with string or butcher's tape.
- To make the sauce, combine the water, soy sauce, and honey in a small saucepan and simmer for 5 minutes.
